New Orleans Jambalaya Main Dish

Fun fact - Onion, celery and green bell pepper are considered the Cajun trinity, used in almost all Cajun dishes.


Ingredients:

  • 1 Tbsp olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped celery
  • 2 garlic cloves, minced
  • 1 cup rice
  • 1 pound cod fillets, cut into 2 inch pieces
  • 1/2 pound smoked sausage, cut into 1/4 inch thick pieces
  • 1 15ounce can diced tomatoes
  • 1 & 1/2 cups chicken broth
  • 1/2 pound bag medium shrimp (thawed)
  • 1/2 cup frozen peas
Makes 6-8 servings


 Now for the fun part on putting this yummy delicious concoction together :)
Note: Remember the object of this whole process is to not get burned by handling HOT items.

  1. Preheat oven to 350 F. Heat oil in a 3-quart ovenproof saute pan, add the onion, green and red pepper, celery and garlic; cook until vegetables are softened, about 2 minutes, now add rice stirring to coat with oil, now stir in cod, sausage, tomatoes and broth.
  2. Bring to a boil over medium heat, then remove from heat cover saute pan and bake 20 mins.
  3. remove pan from oven and stir in shrimp, once you have completed this task without burning yourself put the pan back in the oven and continue baking until liquid is absorbed, about 10 mins.
  4. Remove pan from oven, now add peas and cover; let stand 10 mins.
Note: you can season with hot pepper flakes to add a lil kick to this dish, to make it look good and add different taste you can sprinkle some parsley, or do both together and experience a lil taste bud party in your mouth. Don't forget a glass of fine wine like "Castle Rock California Cuvee Pinot Noir" to go along with your meal, Enjoy!! :)
